I may humbly say that I am not a simple minded person. "Believe" therefore doesn't settle it for me, and just "believe" doesn't make anything true.

It means: I have made my mind up, don't confuse me with the facts. (Or perhaps: I have made the facts up, don't confuse me with your mind.)
The Bible is a collection of books written by different authors over many centuries: as such it can't, as an entity, be regarded as an authority on anything. Individual verses by particular writers may be quoted, but so what? For this fundie war-cry to have any content at all "The Bible" needs to be regarded as one cohesive book written by one author, and what's more one who never contradicts himself. Which is so clearly not the case it isn't worth discussing the view with anyone who holds it.
