Depending on how much time has elapsed and how many generations have passed, yes or no. Several hundred years, you won't see much change. Several hundred thousand years, you may have a new specie.

How so? I don't think any scientist studying evolution gives two shits about mythological beings, because they are, after all, mythological. And a half-man, half-horse or winged horse is not part of evolution. It's a straw man argument that creationists use.
And if a Pegasus or Mintoaur ever were proven to exist, it would totally disprove the Theory of Evolution, since they would totally go against what we expect to see.
