Fruits begin as a flower to attract pollinators. When the seeds ripen, the fruit also ripens and colors up to attract birds or mammals to eat it and disperse the seeds.
Vegetables are wild plants that have been modified by humans over many generations.
Seed dispersal often relies on being eaten then spread round through waste.
By being nutritious and yummy, fruits and veg are more likely to be eaten, thus continuing their children's lives.
So they evolved to be nutritious and yummy.
Thus you suck arse.
When animals eat the fruit and pass the undigested seed, the plant reproduces, and by doing so had an advantage over one that didn't. It's, er, "spilling its seed."

The fruit is a propagation mechanism for some plants. It is a seed or seeds in a tasty package that an animal eats, and later poops the seed in another location, perhaps to take root and grow. It is indeed fortunate for us that many plants use this device and not burrs and stickers exclusively.
