You mix Evolution and evolution, which are two seperate, albiet connected, things. The Theory of Evolution is that man evolved from lower primates blah blah blah. To follow the Scientific method, and therefore become science, you need to be able to replicate it, which has not been accomplished and not for a lack of trying. Evolution (lower case e, capital for grammatical reasons only) does occur, but it is not proof of Evolution. The better word would be adaptation.

To be honest, I don't think that this is very fundie. He simply states that the fact (sic!) of evolution does not imply the TOE, which comprises much more than just mutation. Of course in the end he is still wrong. The mechanism of evolutions has to be replicated, not the particular mutation itself.
Assessment: a person with some reasoning, but some educations is still needed.
Evolution is adaptation. You shouldn't have to avoid a word just because your friends at church are going to flip out if you use the word without "IS WRONG!" after it.
If I'm getting this right, your point is that the fact that evolution happens (cannot in fact mathematically not happen), doesn't necessarily mean it was the origin of humanity. That works both ways, though. Doubts and uncertainty regarding our origin cannot change what we do know: life evolves.

The evolution (aka "adaptation to a changing environment, through random mutations and natural selection") is the actual process, the ToE is the scientific description of the process. They are, in effect, the same thing.
