They went to school and studied radioactive decay.
And because they did that, they know better than to try and use carbon dating for anything that is "millions of years old."
You won't understand that comment, because you don't know the basics of radiometric dating and that's ok. There's so much to know you can't know everything. However, if you are going to criticize a scientific concept, then you do need to understand it first.

carbon 14 dating is only good to around 35000 years give or take.
there are several radiometric dating methods that go to millions.
If you do 2 or 3 different methods and get the same date you can be fairly sure its right.

They didn't; carbon dating only works to about 60 000 years ago.
Among other thing, they can tell from growth rings in fossilized trees, check for damages from known forrest fires and count backwards from there.
