I accept what the evidence shows to be true. There is a ton of evidence for evolution, and the fact that I'm not floating in space says it all about the existence of gravity. I also accept without reservation that the Eiffel Tower is in Paris and that there are penguins in Antarctica, but why the fuck should I blindly accept the existence of an implausible and invisible deity when there is an alternative and much better explanation for everything he is supposed to have "created"?
I have to know everything about all three, but with evolution and gravity there are FACTS and evidence readly available.
When God becomes a scientific theory, I will consider accepting him/her/it as FACT too.
This is in fact your game. No matter how much evidence is provided for an old Earth and lifeforms changing over time you lot cling to the fairy tale of a creator God.
You also refuse to provide any evidence for Him, claiming special status for your claim while demanding absolute (everything) proof for the case of evolutionary development.
Oh, and then there's the other pesky fact of your religious claims: You've provided nothing. We'd appreciate the effort of providing something, but you all insist you've got some sort of special assertive rights that no one else is allowed that gives you and only you freedom from facts.

I don't, as there IS proof. I have to know, perhaps not everything, but the reasoning behind it and at least see some of the evidence, not only for God, but for everything.

What you’re describing is creationism. God doesn’t say HOW he did things, just taht he did, you accept it. But any hole in the evolutionary change is where you grab the brakes.
For gods i just need to know ANYTHING that suggests they’re real.
