If they can calculate how long it’ll take the probe to reach Saturn, they can calculate where Saturn will be at that time. Then tracking the probe and adding it to the map of Saturn, we get the trajectory needed to intersect.
As the training film says, ‘The probe knows where it’s at because the probe knows where it isn’t. Subtracting the goal position from the current position leaves the distance/direction required for the probe to achieve intersection. Most of these calcuations were completed before launch…”
