When you point out a Bible verse about the reality of Judgment Day, do you ever have people say something like, "That's just your interpretation!"? If that happens, quote Luke 13:3 to them. Read it to them and ask them to give their interpretation. Get it into their hearts. It's quick and powerful and sharper than any two-edged sword.
Also, never be concerned when sinners tell you that the Bible has changed or that it is filled with mistakes or that they don't believe it. The Bible was given as a lamp to our path, and it only gives us light when we approach it with childlike faith and humility of heart. So, don't worry about their unbelief. Get it into their hearts. It won't return void. Then pray that God brings it to life at the right time.

I was curious, and took a quick look at Luke 3:13 -- "I tell you, Nay: but, except ye repent, ye shall all in like manner perish."
That verse doesn't state that there will be a (singular) judgement day, nor does it even indicate that there will be multiple (individual) judgement days. It merely state that those who fail to repent will perish (and, by implication, that those who do repent will not perish).
Compare and contrast: "Those who do not eat food will surely perish" -- this is an obviously true statement and /doesn't/ require any sort of sentient being to pass "judgement" on those who do not eat food.
So, yeah, I don't think that verse not only fails to support your point (that "Judgement Day" is a real thing that we should be worried about), it actually proves that you are, in fact, interpreting the verses that you read -- it isn't as easy as "Read the words and know the truth".

Ray, I'll quote 1 Corinthians 13:11 (KJV)when you say that:
"When I was a child, I spake as a child, I understood as a child, I thought as a child: but when I became a man, I put away childish things."

Repent of what? How can you repent without having some specific act in mind? Paul says we are all constantly sinning in the eyes of God no matter how well we try to act. And what does one actually do to repent? Yell "I'm sorry" at the sky? Kneel and mumble it at your folded hands? The Roman Catholic Church says "repent" means confess your sins to a priest and do penance for them to show your repentance. I doubt that Ray, a Baptist, would agree with that.
Words are only quick, powerful, and sharper than any sword when they're actually relevant to the situation. Responding to someone calling out your unintelligent, dishonest interpretation of a Bible verse with an unintelligent, dishonest interpretation of a different Bible verse doesn't cut it.

My response wouldn't be "That's just your interpretation." My response would be, "That's just your religious beliefs which I don't share." If you're going to use the bible as an ultimate authority, you need to prove beyond any doubt that it is indeed true. Just quoting bible verses at me to try to get me to believe the bible isn't going to work. I'm going to need independent verification. I mean, there's absolutely nothing the bible could possibly say which would make be believe all of it.
