Atheism (form of polytheism) is belief in no God(s)...

The reason atheims is considered polytheism in the eyes of God is because you are taking His attributes and applying it to creation. For example: Choosing to believe in an Infiite or Eternal Universe (Eternal and Infinite are attributes of God). So in religion, atheism is a form of polytheism whether you agree or not. It is irrelevant if you choose to believe in a deity or not, but rather its in the actions. Its not about logic, its about reality. And we all know logic doesn't always coincide with reality. Hell it breaks down on the subatomic level. If you deny God, you have no choice, but to ascribe divine attributes to creation in order to justify that disbelief in a Creator. You can define atheism however you want, but in the end people will define it their own way according to its actions.
