Beholders are far cooler than puny humans.
Edited to add: Now I want to play a beholder in a campaign, floating around, blasting eye beams everywhere, being both insane AND chaotic good.
And then people realized that they were already LARPing as humans IRL, and a lot of them would switch it up by playing as elves, or dwarves, then somebody asked why goblins couldn't also be adventurers, then someone asked if mindflayers had to be evil, and now we have all sorts of furry and fantasy shit people are imagining themselves to be in their grown-up pretend-time. Sheer fucking madness, I tells ya!

I admit, Lolth is a bit more of a challenge to fantasize about, but that’s where the adventure lies.

Let’s see. Half-elf, gnome, elf, elf, HUMAN… who got turned into a unicorn, centaur, dwarf (613 things Skippy The Dwarf Can No Longer Do In The Dungeon), HUMAN… with four arms and the dexterity to juggle bobcats….
And Nitefange, a player-character sword that took over the wielder. He was human sometimes… Sort of.

I would agree that some modern D&D art depicts a lot of races and look a bit odd. This is because they need to include some art of every playable race rather then some weird bias. Some of the modern versions of D&D have 20+ playable races included from many different campaigns, more then would normally be included in a single world.
