1. Of course the wife would care. Just like a husband or any other significant other would care about their partner cheating on them. The "punchline" would work just as well with "Because we're married." Or "That's my whatever type of partner"
The argument "Why do you care what consenting adults do in the privacy of their bedroom" is meant for general behavior that the GOVERNMENT has interest in. The government shouldn't really care if there is a gay couple, an interracial couple, or if a couple engages in anal/oral sex. All of those things have been illegal.
2. Incest, especially parent-child incest, is super hard to establish consent absent grooming/coercion.

Pedophilia is crime because it involves a child who cannot consent.
Two people of the same gender being romantic is usually consensual, which makes all the difference.

You do realize that parent/child incest is likely to be rife with grooming and brainwahing? ( aside from the rare scenario of a child being given up for adoption and then meeting bio parents as an adult by sheer chance).
It's very hard to say if an incest relationship is truly consensual , even if all participants involved are adults.
Incest is a huge taboo for a reason.
