Humans tend not to. We feel changes in motion, acceleration or deceleration, but when our inertia matches the vehicle, we feel that we’re at rest.
And when you look out the car at an approaching vehicle, ever notice that if you’re doing 70 and THEY are doing 70, they appear to race past you at 140? But neither car is DOING 140!?!?!

Actually, the company i work for makes gyroscopes for targeting SLBMs which can directly measure the speed of the Earth’s rotation.
It’s not an assumption or a conclusion, we can observe it.
