What's wrong with genocide? If I had a enemy that wanted to kill, rape, molest my people and children; why would I give them any mercy? If Israel wanted to they could end Hamas, Hezbollah, houthis, and Iran in a day, maybe less.

You mean, apart from the sheer cruelty and evil of it? The problem is that if you wipe out a target population, you could very well be wiped out yourself if other people decide you've become a threat. Look what we did to the Nazis.
Thing is, even taking into account the terrible shit Hamas did to Israeli citizens, Hamas is not the entirety of the Palestinian population. And considering Hamas keeps using Palestinian civilians as meat shields against Israeli counterattacks (such as hiding underneath hospitals, a WAR CRIME), it’s even more wrong to want to exterminate all of Palestine for what one terror group did.
So, yes, Genocide is wrong.

It’s the same mechanism. THOSE people need to die, hold everyone else responsible, exactly as guilty.

Assuming that they have a lot of nukes, and pulled off a successful first strike, yes… and shortly after, Israel would also cease to meaningfully exist.
There’s a reason why even the fucking Mafia enforces itself limits on how much they could “go to the mattresses”: because they knew that limiting their brutality was more rentable than going all in. There’s a reason why most militaries generally avoided giving no quarter orders: they just don’t want to have enemy soldiers fighting to the last cartridge because, either way, they’re dead so they might just choose the way most likely to have them surviving or at least get honour.
If genocide is introduced as an acceptable methods then you might see nations straight up deciding that everything is permitted to resist: for exemple, some might just decide that WMD are the way to go.
